I'm setting up a 3970x build using two founders and an 2080Ti. The ASUS ROG Zephyrus II Extreme Gas 3 EPS connectors are causing confusion since the power supplies only support two EPS connectors. Suggested solution?

Usually you won’t require all the EPS connectors. I’d use the two available and skip the rest. Since it’s a 6-pin connector, you’d likely choose one of the 6P GPU power connectors. You probably need it for the 3990X, while the 3970X seems to work without it.

The board features two 8-pin CPU connectors. Only one of them needs to be connected to operate the board. The extra 8-pin connector is there for enhanced cooling and power handling; for your setup, a single 8-pin is sufficient...... I was puzzled for a moment, as I had always thought EPS meant Entry Level Power Supply...... Done, I finally figured it out.

All eight pins were used during testing. Without the second EPS, the system remained unstable when PBO was active. Skipping the six-pin setup wasn’t necessary.
