I have a home internet connection and the ISP-provided Huawei router has limited WiFi performance. I recently purchased a new Xiaomi router, but it lacks VLAN tagging which my ISP requires. While the Huawei supports bridging mode, I’m unsure if I should use it or AP mode. I plan to connect the new router via LAN to the old one in either case and disable its WiFi signals. Which approach would be more effective?

I suppose you could go either route here. The depending factor being do you want to manage your network with your router or theirs? Yours? Use bridged mode. Theirs? Use AP mode. I'm not aware of any overbearing reason to go either direction in this scenario.

You can keep your Xiaomi router in router mode for bridged mode. That’s the standard setup.

Yes. Xiaomi will gather your public IP address and handle all network administration via their system. Features like port forwarding, QoS, IP assignment, etc.
