Updated with the newest BIOS from the Aorus/Gigabyte website. Also verified that Intel confirms the i7 7820HK supports XMP—did Gigabyte fail to enable it, or is there another reason? Clarification appreciated!

Absolutely correct. I decided to upgrade to 32GB (two 16GB modules) anticipating a 2933 result with XMP, assuming the chipset can handle it.
