Your perspective on the setup is interesting. I switched from a mouse and keyboard to a 360 controller on my RetroPie, but I haven’t encountered major compatibility issues on PC. The latency doesn’t seem significantly worse compared to the original controller, especially with Bluetooth handling the connection.

It resembles the 360 controller, and you won’t make a mistake—either option works well. It will revert to xinput, causing certain buttons to change places.

Never tried it before, but I think you'll do just fine since the steam controller API supports almost any controller for any game on PC.
