Yeah, what @ Oshino Shinobu said. Pretty sure you can play it with i3 CPU's too And 750 should do decent too, just like the R7 260X
No one is actively working on the e6600 or similar dual-core parts right now.
GTA V definitely favors four cores over two, yet the main concern is that the Pentium E6600 was already an affordable CPU five years ago and it matches the performance of a first-generation AMD Phenom. I'm sure GTA V would work, but it's going to be challenging.
The 260x is on the lower end as well, and adding two units will certainly improve the variety of games with a solid crossfire performance. Are you using the 0.5GB version?
The VRAM isn't stacking, which seems to be your main constraint (the crossfire support is functioning).
