You can't extend the main partition with Disk Management in that state. Disk management will only allow you to extend partitions if there's unallocated space to the right, and the recovery partition is blocking the main partition.

I attempted to follow his instructions and restarted, but now I’m encountering a bootmgr error. The 480GB SSD isn’t appearing in the disk manager anymore, which might mean the advice didn’t work.

It doesn't matter whether it's an SSD. HDD to SSD clones function perfectly fine.
