I found a X570 board with a unique ASUS variant labeled DTX. It seems to bridge the gap between ITX and MATX designs. Could it be compatible with a special case or would it work with a standard MATX enclosure? The price is likely around $700 to $800.

The Asus Crosshair VIII Impact fits in Mini ITX, ITX, and Micro ATX enclosures. No special case required.

You're likely referring to the Crosshair VIII Impact, also known as Mini-DTX. It matches the width of Mini-ITX, shares the same mounting holes as Mini-ITX (though possibly differently), but is slightly taller.
