The 7600x paired with a 6800 offers the top performance among your choices.
The 7800X3D provides stronger gaming power but needs an RX 7900 XTX. If the 6800 is the most affordable GPU option, then the 7600x is the ideal match.

It would perform better in your setup.
The AMD GPUs can be quite challenging to work with.

Is this DDR4 memory or DDR5? I believe the Vengeance Lpx only supports DDR4. Your board needs DDR5 and it doesn't work with DDR4.

The X3D CPU isn't something I'd think about for productivity tasks like AutoCAD.

I don't believe AutoCAD is that demanding. I intend to continue using AMD, that's the truth. Are you also from Greece?
