Sure, I tried setting up dual 10GB SFP+ NICs on a Windows machine and connecting them internally. It worked as a bridge, allowing communication between devices.

Isn't there a particular GNU/Linux distribution made exactly for this? I can't remember the name off the top of my head though. I think LMG made a video about it a few years back.

You're allowed, but it's not advisable. A 10Gbps switch is cheaper than a computer with many network cards. You'll also save space, cooling, noise, and power usage. The MikroTik CRS305-1G-4S+IN offers four SFP+ ports for $134 on Amazon, and each SFP costs $20 to $40.
