I just bought a 3080 and set it up in my rig. It's performing well, but I'm wondering if switching from an MSI B450 Gaming Plus Max to a B550 would really boost the performance.

As long as you are using a 16 lane slot, and not an 8x slot, pcie gen 3 is enough.
B550 offers gen 4 16x slots, but that really doesn't matter just yet.
For the 3090 you could make the argument, but not for the 3080.

Check the CPU you're running and your RAM type. Consider updating the BIOS on your motherboard to enable the resize bar feature.
