Based on the details, there could be a variation of 2-30fps depending on resolution (1080p or 1440), but 4k won't show any change.
I mainly use 1440p resolution but I’m finding it hard to hit 144 fps in many games where I expect it. The 3080 seems promising, but I’m not seeing the expected performance.

For tasks demanding strong core performance, such as your current 2700x setup, switching to a 5800x would likely be better. If most users rely on a 5600x, it should still work reasonably well. Just for fun, could you share your full system details?
Just following a random target. If you were aiming for competitive 1080P, higher FPS might be more important. My 2700X runs with an RTX 2060 at 4K, and we don’t focus on the numbers—it’s okay. Mostly around 60fps is fine. I’d probably need a 3080 for better 4K performance.
the cpu load seems elevated, around 80% or higher. increasing the resolution from 1080p to 1440p or 4k might not significantly improve performance. consider reviewing comparisons before making a decision.
