2x8 offers the optimal choice in most scenarios. It provides dual channel operation and top performance. The only rare situation where 20GB could be preferable is when your task demands more than 16GB of RAM but less than 20GB, which I doubt will occur in real-world use. Even then, I recommend 24 (2x8 plus 2x4) or 32GB (2x16 or 4x8).
