Games typically rely on fewer cores and threads—around 4 and 8 respectively. A 16-core, 32-thread setup is mainly for development tasks like DAW, animation, 3D CAD, Autodesk Maya, and 3D Studio Max. Video editing and rendering can also benefit from such configurations. Your preference for a 6-core, 12-thread system running at 8700k without any bottlenecks seems reasonable for the foreseeable future.

I work with DAWs and I’m curious about running demanding VSTs such as Reaktor in real time at 3900x speed without any lag. I’m looking for answers on how many instances I can open and use them smoothly.

I use Cakewalk and I launch 75 VSTi's for a project. My CPU usage was around 60 percent. With 100 tracks, that’s about 30 to 40 percent. Also, 40 VSTi's running in real time and more.

I'm also unsure about the best option. My main worry is the I/O die affecting FPS on the 3900x, since AMD says Windows will prioritize one CCX if possible.

Playing only one game makes it seem pointless at the moment. Doing other activities while gaming changes the situation. You're also unsure about what comes next. Upgrading your PC every few years or changing the CPU every five years matters. The longer your computer should last, the more processing power you need.

I prefer 8-core until feedback indicates that combining chiplets doesn't negatively impact gaming performance. It should remain viable for 3 to 5 years either way. You don't require additional cores even when background tasks are minimal, since SMT handles it efficiently.

Verify your preferred game, does it use 6, 8 or 12 processing units? I believe 8 will be ideal for some time since it aligns closely with console capabilities. I’m leaning toward 12, though gaming isn’t my top priority.
