I upgraded to 2 27" 1440p with the 1080p version, but it cost another 600 dollars. 😄

Are you sure you are going to game on 2 monitors ?
it is very inconvenient.
for gaming, it is 1 or 3.
with two, you have bezel in the middle which is very annoying - especially in shooters.
so you kinda wasting your money
would you consider single 34" 3440x1440 monitor instead ?
a single GTX 1070 will be good for it, a GTX 1080 would be awesome.

Well, since you obtained the 1440p@144Hz, you've effectively addressed your query. Only 1080p will be capable of driving it. But honestly, haven't you looked at the 34 UW monitors?

With a GTX 1070 you can achieve 1440p at 144hz if you're willing to accept lower graphics quality, but for better performance a GTX 1080 is recommended.
