Currently running R5 3600, I’d definitely suggest Zen2 because it shows a significant boost in IPC compared to zen+. If you have the budget, another choice is the Ryzen 7 3800XT—it’s still Zen2, but unlike the 3900X/XT, it’s reported to hit its advertised speed more effectively. For gaming, this would be a great option even though some call it a "waste of silicon." If you can’t afford it, go with R5 3600—it gets the job done.
Zen 2 is what you need, and Zen 3 is still pending (as per the official announcement).
Order an R5 3600 now. Consider upgrading to Zen 3 if it seems superior. Dispose of the R6 3600 and acquire a Zen 3 processor.
Sure, you can hold off and wait for the Zen 3 update—prices on Zen 2 might go down a bit.
