Is it acceptable to create a brief tutorial on Office 97 for YouTube? You can focus on the winworldpc website where you obtain the software, which is a vintage site dealing with ISOs and non-copyrighted or public domain programs. Microsoft seems to be in favor of this approach for XP and later versions. My main worry is whether YouTube’s policies apply here—some articles suggest that videos about bypassing Microsoft accounts are discouraged, but I’m not sure if installing Office 97 falls into that category. I just want to share the video without running into any issues, as I really enjoy the Office 97 interface and prefer not to use AI-generated content in that version.

There are various tutorials available on YouTube, and I see no problem in creating and sharing a video about it. However, we don't really know what YT mods think themselves. Maybe check the YT ToS guidelines first.
For office applications, I'm currently using OpenOffice. It's an open-source, free program. I've been using it since the Windows XP era. It's significantly better than the paid Microsoft Office suite.

YT is unlikely to back a platform hosting outdated copyrighted content, which could raise legal issues. It's worth noting the reason behind this mention.

The only content from MS that can be used comes from versions of dos they released on github, and even then it remains under a license (MIT).
Still, neither YouTube nor MS plans to take any action against a small channel, and the likelihood of anything happening is very low, even for larger channels.
In the worst scenario, you might just need to remove the video.

still have office 97 installed and used quite often
love the layout and it meets my needs
never required all those fancy features they kept adding
still functions as intended and avoids all that unnecessary AI stuff being forced everywhere
