Try reducing BlueZ version to 5.68 or below, and skip updates temporarily. This fix helped with an older BT mouse.

What type of headphones are you using? Since they’re Apple, it might be an issue with compatibility. Apple tends to block connections from non-Apple devices. Even if you have Apple headphones, I can still assist you.
