What kind of GPU do you have? Integrated or dedicated? The games you're playing aren't too demanding, and both the i5-12600K and i7-7820x are solid choices (the 7820x is from a few years back). Check out that link—they're quite similar! (I know UserBenchmark isn't the best for comparisons, but I still find it useful.)

My setup is an RTX 2070 Super without an integrated graphics card. It doesn’t affect Minecraft much unless I’m using SEUS PTGI. Most shader packs won’t consume more than 20-30% of the GPU.

Currently, running shaders, using advanced texture packs, or rendering extra sections won’t be effective. The CPU stays mostly idle, around 20% utilization.

In Bedrock Edition (Minecraft for Windows) and Java, the CPU usage is quite low while the GPU remains at full capacity. Refer to the attached image for details.
