I have a WD black 750GB 2.5" hard drive that has worked well for several years. It was originally in my ASUS K53TA-BBR6 before it failed, and now it's on my desktop as a storage device for server/website projects and recordings. Sticking with WD or Seagate is a good idea; I recommend using a WD black or WD Blue drive.

Choose an SSD, it will greatly improve system performance. Based on the model, you might need to take off a panel from the back or even the entire rear cover. For the operating system, if you prefer the same one, locate your license key—usually in the manual or on a sticker inside the laptop. There are guides online that show how to create a bootable USB drive (search "how to make a bootable USB" on Google). Just boot from the USB, follow the steps, and activate using the license you have. Be sure to install the same OS version as your license requires.
