Some titles download and save files to users' directories, while others copy them to the registry. Portable versions extract everything into one folder. These work fine on USB drives without issues. You can install the game into a folder, then transfer that folder to your USB stick. If warnings appear about missing files, you'll need to install it on another system first.
However, the self-contained option might not be feasible, so let's abandon it now.
