I’d turn the laptop into a headless Linux server, letting you connect the drives or folders and scheduling rsync to back them up regularly. You’d need to mount those files before each backup. There are many ways to do this.

You might also set up a folder on the laptop and distribute it. This allows both devices to connect via your home network so you can reach the folder from your desktop when both are online. Just transfer the files as needed.
