Hello, I'm checking if it's feasible to host 500 players on a single GTA V server without lag. Why don't roleplay servers with that many players exist? It seems possible on San Andreas, but in GTA V they're limited to 64 players. Does this need a powerful server? I'd like to understand better.

Nope.
Who possesses 500 friends?
Old-school games don't store much data. So 500 participants.
GTA 5 struggles with lag at 20 players, let alone 64. The higher the number of people, the lower the frames per second.
