I know some solid solo titles beyond Skyrim. As for SimCity, it’s considered a classic and highly regarded for its strategic gameplay and city-building depth.
I think City 3000 is the top choice for me, though the visuals are quite old. For single-player recommendations, check out: TES Oblivion, Dragon Age, Bioshock, Fallout, Far Cry, Dishonored, Kerbal Space Program, The Walking Dead, The Wolf Among Us, Shadow of Mordor, Sniper Elite, Ghost Warrior, and S.T.A.L.K.E.R. Half-Life.

Saints Row shares similarities with GTA, blending fantasy elements, yet remains highly enjoyable for players who aren’t interested in fantasy.
FTL: Faster Than Light is awesome, Terraria is as well. The Portal are a must, and even though I haven't played them myself, the Half Life series is a good choice. Far Cry 3/4 are pretty good, I recommend 4 over 3, but you can decided in regards to your funds. Saints Row and GTA are also really nice games.
