I finished the build and now have dual channel memory with 2x16 DDR4 at 3600Mhz. From an older machine, I have a set of 2x8 DDR4 at 2666Mhz. I’m unsure if adding the lower-end sticks will bring everything down to the lowest frequency, but I’m curious—will increasing the total RAM to 48GB at that lower speed still offer any advantages?

When RAM is below 32 GB, you'll notice only a minor slowdown. The impact won't be significant, though it will still occur.
