Hi, I'm using a nvidia gtx 1060 with 6gb RAM and an i5 8400. I'm considering a slight overclock for the graphics card but not too much. The psu I'm thinking of is the one linked here.
If you're in the UK, avoid purchasing the evga 500b—it won't meet expectations, offering only average quality and not worth the price of £58!!

This Corsair model is significantly better, even the 450m version would suffice and cost £10 less.
It should work well... a combined load of 200-250 watts on a 500 watt PSU is acceptable. However, the GTX1060 (6 GB) is at best a 60-75 Hz refresh card... don't expect to power 100 Hz monitors through a 4-5% overclock.
