My IBM x3850 M2 has four six-core processors and I need an OS that supports four CPUs, not just a server version. The current Windows 8 only displays two processors, so I’m looking for an alternative that can run on it.

It seems like you're confirming compatibility. Any server version of Windows should work fine.

Windows Server 2008 or 2012 are the main options for you. Windows 7 Enterprise is also available, but I’m not sure if it’s what you were thinking.

Choose a Linux distribution or Windows Server standard edition and above. Essentials and lower versions support 2 processors, while lower models have fewer.

I’m thinking about adding some discreet graphics cards, but it seems they might not have drivers for the server version.

They are likely FirePro cards, known for strong driver compatibility. Both offer excellent support for drivers.
