You can prevent automatic downloads by hiding selected updates. This might also work for your situation. Remove the outdated driver or Windows update and look for updates manually. It displays the number of optional and important updates available. Review both, starting with optional ones, as they are more likely to be present. If you locate one, right-click it and choose "Hide Update." You should see options labeled nvidia or geforce. Also, consider "View Update History." If you can't find it, it may be due to another issue. Are beta drivers enabled in the GeForce software? Windows Update might mistake an older driver for a better one.
