I’m trying to figure out the best operating system for different tasks. Should I go with Windows 7, Windows 8, or Windows 10? Which one suits gaming, video editing, programming, and daily use best?

I mainly rely on Windows 8.1. Windows 10 lacks strong privacy features, and Windows 7 feels quite old with several unresolved issues. My view is definitely Windows 8.1.

I run on version 8.1 and it handles mods nicely. It’s reliable every time. I’d stick with 8.1.

Windows 10. If you're attempting to conceal something, consider switching to Windows 7.

I have extensive knowledge of assembling PCs and can certainly provide solid guidance. Could you share your budget, the main purpose for the build, any specific preferences, and what components you currently have?

They didn't even notice them did you? Microsoft has acknowledged that Windows 10 monitors its users, they've also confirmed automatically installing Windows 10 on certain Windows 7 and 8/8.1 systems, and stated that the surveillance by Windows 10 is unavoidable as it's built into the operating system. So yes, it's clear Microsoft is tracking Windows 10 users.
