Why do all my other games work great, but Fortnite acts up?
I have a ryzen 5 3600x, mwe 650 gold rtx 2060 16gb ram, and an asus prime b550m-k. I tried lots of fixes by running it on DirectX 11 or 12, I updated my drivers completely, and I deleted and reinstalled them into different folders many times. I can play apex legends max settings getting 144 fps, along with many other games, but I don't understand why fortnite is crashing for me.

Where is this game stored: in the hard drive or the fast SSD? Just run your manufacturer's tool to fix it if that specific model supports an SSD update.
I tried using the manufacturer's app to refresh my SSD, but there was nothing new to install since I already had the latest version.
Your RAM isn't set to the right mode. You probably have DDR4 3600, but it's running slower than expected because of your graphics card. This difference in speed might be slowing down how well you can use your computer. If you are having trouble making your CPU reach higher speeds for that memory, then that is a different issue. Generally speaking, getting the system to run at 3200 MHz or lower should work fine for most setups.

How does the computer crash? Is it just crashing to desktop or shutting off? The blue screen of death happens when you check that memory but find a kit of one instead of two, so mixing things up causes XMP settings to become unstable at 3600 speeds. Probably it should only handle up to 2666.
