The military certification appears excessive and possibly not ideal. For instance, the device isn’t likely to face issues like falling, freezing, or being exposed to vibrations or explosive gases during normal use. It will also encounter humidity, and the saltiness of water droplets (and some sand) is a concern as noted in the white paper at the provided link.
The sand and sun are not your allies, which is why these suggestions are made.
I genuinely believe an iPad would be suitable for this purpose if it meets all your requirements. They also have a clever feature—everything fits inside, and the touch screen operates via a ziplock baggie.
