This depends more on the game than the actual parts used.
Valorant launched in 2020, and Red Dead Redemption 2 also arrived for PC.
In Valorant, you could achieve over 200 fps with a GTX 1660 Super, while in RDR2 you'd likely see much lower numbers—around 60-70.
I think a GTX 1660 Super would be the typical choice, but most games at high ultra settings usually run between 60 and 75 fps.
A 2060 would probably give you those higher numbers.

Yes, I agree. The RTX 2060 would suffice. ~$400 new, ~$300 used
CPU AMD Ryzon 5 3600 would work too. ~$189
16 GB RAM ~$60
Good motherboard: ~150
Reliable power supply: 500 to 600 Watts ~$70
Quality SDD with 512GB: $125
Case: ~$60
You might need Windows (unless you already have it)
Therefore, the PC should cost around $1000 to $1100? Maybe less if you opt for a used graphics card. Plus your monitor...
