I've used it on my Laptop a bit and Desktop. Complaints are that it doesn't feel super duper polished. Runs badly if you don't have an SSD, it has an old linux kernel installed and frankly the software center they include is nasty. But otherwise it's fine. If somebody were able to make Ubuntu look like Elementary without all the problems of Elementary then I'd use that instead.

It works well overall because it's still young, but the older chip and missing controls are really annoying.

I understand why the absence of minimize and maximize options was confusing—I struggled to figure out how to activate them, then realized they weren’t available at all.

Have you explored the HWE kernel? You can install version 4.10 (HWE) or 4.11 (HWE Edge) of the Linux kernel in Ubuntu 16.04 now. I understand Elementary is built on 16.04, so it should be able to access those updates.

I never made an effort to refresh the kernel since nothing I did needed it, yet it's strange that the newest version doesn't include the latest one I know about.

They seem to be copying ideas from other businesses. There’s no real benefit for the user in using their computer setup. If they aren’t introducing something original, then there’s little value added.

HWE depends on the kernel version of Ubuntu being used. 17.04 runs on 4.10. The reason for HWE Edge remains unclear, but it might be the previous release to ensure stability.
