After much discussion about the components for my new PC, I settled on the 7900XT GPU. For the CPU, I’m torn between a Ryzen 7 5700X (€208) and a 5800X3D (€354.40). The latter is more expensive by €150 but nearly double the cost of the former. With a 1440p 144Hz monitor, which I already have, the decision hinges on whether the performance boost justifies the extra expense.

For your screen there’s only a slight variation, almost no noticeable change. It doesn’t justify the additional cost. (My view)

In my view, the i9 12900k is the top choice for the 7900xt since it avoids any bottlenecks entirely. The CPUs you picked both have a 20% or higher bottleneck due to the GPU being very powerful. If you prefer AMD chips, consider the Ryzen 9 7950x or Ryzen 9 7900x, which both show minimal bottleneck issues. For maximum performance, unless you don’t mind your GPU being about 20% faster than your CPU, you can opt for the highest-end CPU within your budget while ensuring it doesn’t have an excessive bottleneck.
