Many systems could handle games such as BF4 at about 80fps on ultra settings, and Crysis 3 at 85fps on high performance. That should really satisfy your expectations!

Mostly smooth performance across nearly all titles at 1080p. With a 1440p display, ultra settings work well depending on the game.

It starts up smoothly, launches Windows and opens applications... It works perfectly, managing games at both 1080p and 1440p resolutions.

I don't understand why people act this way in discussions—some seem dismissive or make light of serious matters. Just like others did, I got feedback on my plan so I wouldn’t waste resources. If you don’t have anything useful to share, maybe reconsider your approach.

It would perform similarly to OP's PC. The Xeon matches the i7 in speed but lacks overclocking options. The 780 offers comparable results to the 970, though it has fewer RAM slots, limiting the number of open tabs.
