It's the fastest gaming CPU right now due to its high clock speeds and large cache. With only a few cores that support hyperthreading, it can smoothly manage some non-technical creative tasks.

How demanding is it? If you're just extracting highlight clips, the choice of CPU shouldn't be a big factor since both should handle it easily.

Even when using the CPU, there should still be sufficient idle cores available during gaming. In fact, most games perform well even with high performance hardware, though speed isn’t guaranteed when gaming at maximum intensity.

These elements aren't that demanding. The key areas are effects and color adjustments—things you rarely do for what you described. The 7900X would work better, but the gap in performance won’t justify skipping the gaming perks of the 7800X3D.

I upgraded from a 7900x to a 7800x3D and unless I schedule exports, I haven't seen any change in productivity on the ground. (By the way, I can say the same about gaming performance but my GPU is limited about 90% of the time) Just grab the 7800x3D—it's cheaper and uses less power.
