It seems a 7th generation i5 and 1060 should work well with VR, you might run smoothly using an R7 and 1080 Ti.

I tested it on both my primary machine (1700 + 1070) and my laptop (6700HQ + 1060), and everything performed well.

Sure, your setup is solid. The specs you mentioned should handle VR, even if it doesn’t feel great at first. Just keep in mind that high frame rates matter more than you think, and using a controller instead of an AR-15 can really break the immersion for certain games.
