I conducted this test regarding adding a heatsink to the VRM of my motherboard, which previously had no VRM. Many people advised against applying thermal paste on MOSFETs. Is that accurate? It performs well in terms of electricity, but it tends to become a chaotic mess that’s hard to fully restore.

They were referring to a white adhesive used for bonding tiny heat sinks to transistors, commonly called thermal paste or thermal grease.

mosfets and perhaps some inductors. (since not every heat sink includes them.) I’m thinking the paste won’t damage anything if it isn’t conductive—most thermal pastes aren’t.)

I wouldn't go for it. The parts might not sit perfectly flat, which could mean weak contact on some of them if you're using a straight heatsink. I could be mistaken, though—others might have better ideas. If you really want better cooling, consider a more costly thermal pad that matches the existing ones. In general, VRM units don't require much cooling, but having the original setup is preferable to risking overheating.
