It should work, but Wi-Fi reach depends on your home's dimensions. A tiny space usually suffices, while larger rooms may require several access points.

Set up PFSense on the mini PC. Dedicate one port for WAN and another for LAN. Use an access point for Wi-Fi. Add extra LAN ports by connecting them to a switch, and link the access point to a switch port.
