Your USB seems to have worked correctly, but the EFI partition might not be showing up at all after unplugging. It could be a temporary issue or a configuration problem. Check if the drive is properly recognized and try connecting it again in another location. If it still doesn’t appear, consult Apple Support or your macOS version notes for more details.

That’s understandable, but it seems to appear again immediately after installation and before you disconnect the USB.

Probably because the operating system doesn't detect the hidden flag status until it's reconnected...
