The issue is limited to 1Gb ports only. For a router needing more than 1GbE, consider using pfSense or another DIY setup. Routers supporting over 1GbE tend to be more expensive. I’ll go with an UDM Pro since it’s affordable and offers 10GbE ports. It won’t monitor other devices, but that shouldn’t be a concern. I’ll pick another router for the main setup, though you can use it as an admin panel if needed.

Did you misunderstand the Golds specifications? You thought the single port was multi-gig capable, but it's actually just one gig. I'm fine with that. You intended to use one gig for the private network and split the second gig between guest traffic and IoT segments.

It supports 3Gbps, yet only has 1GbE ports. For a standard WAN or LAN configuration, you're limited to 1GbE. I'll choose a basic box—same setup time as these systems. A simple old desktop works fine, or go with an UDM pro if you need immediate use.
