I operate in a setup with roughly 100 thin clients, mostly using Embedded 7 which performs well for its purpose. We occasionally had a few XP thin clients, but I discarded them all. I didn’t want to attempt installing 7 on them since they’re outdated and slow. I recommend discussing upgrading with your manager or considering an embedded version of 7 (or 8 if available) for them. Be sure to boost the RAM—most XP machines have around 512MB or more.

I don't have that option. I'm compelled to place the order for an i5 first generation with 4 GB RAM and a 500 GB SSD to swap in the thin clients.

Love vintage refurb hardware that will stop working in just a few months.

I checked upgrading our thin clients, but didn’t locate a suitable Windows 10 IoT Core image. It seems risky to change the OS of a thin client—it could cause compatibility issues. Drivers will be tricky. Instead, consider purchasing a refurbished dual-core PC with enough RAM to run Windows 10.
