I've looked for solutions to these issues but found nothing. 1) When will the Windows 7 Update Servers stop operating? Specifically, after installing Win7 SP1, will Windows Update cease functioning or become unable to fetch updates beyond that version? 2) With the latest Win7 disc/ISO being SP1, is there a full or nearly complete update package available elsewhere? Would this eliminate the need for downloading and rebooting through the standard process?

You only need the most recent cumulative update available on the Microsoft website. Finding it might be quite challenging...
