UDIMM refers to the standard way of describing unbuffered DIMMs in server discussions. Regular DIMMs can also be unbuffered. It seems like just variations in terminology, so you need to connect what you're observing for clarity.

I just want to enjoy playing games, so if it doesn’t affect performance I’ll stick with the dimmer settings.

I think you misunderstood. There is no difference to make, they're likely talking about the same thing written two ways. Again though, I can't say for sure without seeing what you're talking about.
