Yes, you can disable certain cores and still run smoothly with a higher clock speed.
the boost allready handles this. disabling cores really wont do much if any. you can however enable PBO which removes the powerlimit. there is also ccx overclocking, but im assuming that is not what you are interested in.
A Zen 2 CPU features 2-3 dies, with 1-2 being core-dies. Each die contains 2 CCXs. The 3700X includes 1 die and 2 CCXs within it. Ryzen Master identifies which cores belong in each CCX and highlights the top-performing ones. Every CCX can hold up to 4 cores. It’s possible to find a configuration with 4 cores handling 4.3GHz and another set running at 4.2GHz, though core counts may vary based on silicon quality and VRM strength. Be careful not to push core voltage above 1.4V, and aim for around 1.375V or lower. (Note: Zen 2 on 7nm is still evolving, so degradation patterns aren’t fully clear.)
