I enjoyed the hitman titles, Absolution was decent. But I really favored Blood Money. It maintained the original games' quality better. Absolution offered some quirky missions beyond standard assassinations. The Splinter Cell Blacklist features some top-notch stealth multiplayer experiences (the chaos theory era was especially impressive). In my view, it's one of the top team-based FPS games ever made. It pits spies against special operations forces. Spies must infiltrate and disable computers at a mercenary base, while mercenaries rely on firepower. Payday 2 brings some distinctive elements, but it offers solid entertainment value for its price.
I just played Far Cry 4 and while it isn't a stealth-focused game, a lot of it can be handled by sneaking around. I really like taking out enemy camps with sniper rifles, close-quarters knife fights, and finally animal attacks by dropping bait in the camps.

You can enjoy Fallout 3/NV or Skyrim as a stealth experience. I usually go for Assassin or Silent Sniper—it's quite entertaining. You might also like Deus Ex: Human Revolution; it was one of the top stealth games I've played.
