The 1070 model won't handle triple 1440p in most games, except perhaps for titles similar to CS:GO and MMORPGs. And no matter what. You're approaching this incorrectly: these twin monitors are often regarded as among the finest gaming displays ever created, offering an ideal mix of features (34" 21:9 1440p 100Hz IPS with G-Sync).

It uses about 1.5x more pixels than 4K, so check the 4K FPS and divide by 1.5 to see what FPS you should expect with three 1440p monitors. Yes, it can handle three of them without issues. You might be able to run two at a time, especially for older games. Two 1080p displays are likely to work too, but you probably won't be able to play all three simultaneously unless the game is very old.
