I considered several Skyrim mods that might have been adapted for Skyrim SE, but most end up in the "Top files" area of Skyrim SE Nexus. I suggest keeping an eye on that section for a while. Notably, the Static Mesh Improvement Mod ranks second in Top files—it's a well-known classic and performs just as well in SE today.

Usually, it works with an existing save file. I haven’t found any mods that specifically needed a fresh save, but there might be some. Be sure to follow the installation notes carefully.

There's no reason to not start modding now, there are already quite a few mods out that are really good. I'd include Wildcat—it doesn't perform well for magic users, but the challenge feels much improved compared to the standard And A Quality World Map by IcePenguin. The regular map looks quite poor, so I'd want the roads included to reduce reliance on fast travel. Also, if you enjoy having followers, consider the Amazing Follower Tweaks.

For fresh saves, avoid Wildcat and opt for Smilodon. It's written by the same creator and includes all features of Wildcat plus additional capabilities.
