There's a check-box option under Appearance settings about colouring the title bars. Though I think it doesn't separate title bars from taskbar colour. Anyway, unchecking this box will make the title bars white again.
To adjust your display settings, go to Settings, then Personalization, and turn off showing colors on the Start, taskbar, action center, and title bar.

Startisback also offers separate title bar colouring, perhaps task-bar adjustments instead—turn off title bar colours in Windows settings, then use Startisback to pick the taskbar colour, keeping the title bars white.
