I'm using a PC with solid internet speed, and my Ethernet is a 1Gbps port. If I switch to a new PC with a 1Gbps port plus a 2.5Gbps one, would the connection improve if I moved it to the faster 2.5Gbps card?

It would work better unless your connection costs more than 1Gbps and you own gear capable of handling speeds above 2.5Gb.
