Your GTX 970 works only with macOS High Sierra and earlier versions. With a Kepler card (600 and 700-series), you can use Mojave, Catalina, and Big Sur without issues, though your GPU is a Maxwell card. To build a Hackintosh and run the latest macOS (Big Sur), you’ll need a Kepler card (excluding those with GK106 core) or an AMD supported card such as RX 5000 series, RX 500 series, or RX 400 series.

There is now this which makes everything far simpler: foxlet/macOS-Simple-KVM: Tools to set up a quick macOS VM in QEMU, accelerated by KVM I'm not sure if it is exactly what you want.
